Lydia's Brown-Sugar-Lime-and-Rum-Glazed Lobster
Butterscotch Sauce (makes 1 cup)
Ingredients:
2 whole lobsters, halved
3 cups Cavalier rum
1 cup brown sugar
1 cup lime juice
1 bunch chopped cilantro
1 cup melted butter
1 cinnamon stick
Salt and pepper to taste
Preparation:
Wash and pat dry lobster halves. For glaze, combine all other ingredients in a medium saucepan and cook over low heat for approximately 10 minutes or until alcohol has evaporated.
Grill lobster halves, brushing constantly with glaze until charred but not burnt.
Serve with roasted potatoes or rice 'n' peas and use remaining glaze as a dip.
Serves four.
