Bubbles and BBQ in Paradise
Luck would have it that our first stop during our sailing adventure was to Peter Island Resort where their executive chef Lisa Sellers, known for her Caribbean-style cuisine, had challenged visiting Texan chef Jay McCarthy to a barbecue cook-off (click here to view more photos).
Jay armed with his smoker, Certified Angus Beef® and secret sauce prepared short ribs, brisket and skirt steak, all carefully rubbed with a tasty blend of spices. Lisa, on the other hand, prepared the popular Caribbean jerk pork with a spicy bbq sauce and fresh grilled lobster all on a traditional steel drum grill. Our contribution to this grand event? To indulge, drink champagne (small tip: champagne or sparkling wine pairs perfectly with rich, fatty barbecue) and judge the winner.
Just another day in paradise!
